HiPer® Yeast Cell Immobilization Teaching Kit allows immobilizing yeast cells in alginate beads and determine its enzymatic activity by invertase assay. The immobilized yeast cells can be used for the production of several enzymes namely invertase, zymase, lactase, maltase etc. Beads containing immobilized yeast have invertase activity and will convert sucrose into the reducing sugars glucose and fructose that can be detected using DNSA.
