Indicator organisms are the groups of microorganisms that are used to assess the hygienic status of food. Their presence does not necessarily indicate the presence of pathogenic microorganism e.g. Enterobacteriaceae , Escherichia coli, which are non pathogenic. The group includes both pathogenic and non-pathogenic bacteria. Bacteria such as Coagulase positive staphylococci, Clostridium perfringens, Bacillus cereus, Vibrio parahaemolyticus, Campylobacter, Salmonella species, Listeria monocytogenes (CPS) etc are the examples of pathogenic bacteria.
